Here is a good breakfast option for kids.

Apple Pancakes

1 Cup Bisquick Baking Mix

1 Egg

1/2 Cup Milk

1 Teaspoon Pumpkin Pie Spice

Zest of 1/2 Lemon

2 Medium Apples, pared and cored

 

Core and cut apples crosswise in 1/8-inch slices, set aside

Beat bisquick mix, egg and milk with rotary beater until smooth. Add pumpkin pie spice and lemon zest to batter and mix until incorporated

Grease griddle or skillet with nonstick cooking spray.

Dip apple slices into batter. Cook on hot griddle until golden brown, turning once.

Here is a recipe for cauliflower tots.  They taste like cheesy tater tots and kids really like them! 

Cauliflower Tots

1 medium head of cauliflower

2 Tbl heavy cream

2 Tbl butter

1/3 cup shredded sharp cheddar

4 egg whites

salt & pepper to taste

oil for frying

 

Clean and trim cauliflower adding florets to a microwave safe bowl.  Add the cream and butter to the bowl.  Microwave for 5 minutes.  Add the cauliflower and cheese to a magic bullet or food processor  and blend until still chunky - kind of like a cooked oatmeal consistency.  Season with salt and pepper.  Whip the egg whites to a stiff peak.  Fold 1/3 of the egg whites into the cauliflower mixture to lighten it up.  Then fold the cauliflower mixture into the rest of the egg whites and gently mix until combined.  Fit a pastry bag with a round or star tube or you can use a large ziplock bag with about a 3/4 inch opening in the corner.  Spray the inside of the bag with nonstick spray.  Gently squeeze out 1 inch sections onto a greased cookie sheet, cutting with a butter knife as you go. 

When finished, bake in a 375 degree oven for 10-12 minutes (or longer, 25 min, if you're skipping the frying) until puffed and slightly browned.  Remove from the oven and serve – or heat 1/4 inch of oil in a saute pan and when it's very hot add the tots.  It doesn't need long, a minute per side to turn them golden brown and crispy.  Serve immediately.  These are still tasty after they cool but they start to lose their crunch only minutes after they come out of the oil so if crunch is what you're after, eat them right away!

Disabilities cover a wide range.  Some are obvious -- such as a child with a physical disability who uses a wheelchair or a child with a visual impairment who uses a cane when walking. Other disabilities may be more "hidden" -- for example, children who have learning disabilities or autism spectrum disorder.

Chances are that at some point your child will have a classmate with a disability. Just as you guided your very young child when he or she began to befriend others, you can encourage your child to learn about and be a friend to children who have disabilities.

Here are some basic ideas to share with your child:

  • No two people are the same -- some differences are just more noticeable.
  • A disability is only one characteristic of a person. People have many facets: likes and dislikes, strengths and challenges.
  • Children with disabilities are like all children in that they want friends, respect and to be included.
  • Children can be born disabled or become disabled from an accident or illness. You can't "catch" a disability from someone else.
  • Just because someone has a physical disability (when a part or parts of the body do not work well) does not mean they necessarily have a cognitive (or thinking) disability.
  • Children with disabilities can do many of the things your child does, but it might take them longer. They may need assistance or adaptive equipment to help them.
  • Try to use clear, respectful language when talking about someone with disabilities. For a younger child, keep explanations simple, such as, "She uses a wheelchair because a part of her body does not work as well as it could."   
  • Reinforce with your child that name calling -- even if meant as a joke -- is always unacceptable as it hurts people's feelings.
  • Kids with disabilities can, should, and want to be included in parties, play dates, and other activities whenever possible.

Here is a great and easy recipe to do with the kids. It has been tested and approved by our own kids. Enjoy!!
Prepare a box brownie mix and place 1 tbsp of batter in cupcake wrappers. Place a mini york peppermint patty on the batter and add another tbsp of brownie batter on top of the york patty. Bake at 350 for about 15 min. Do not overcook. Sprinke the top with powdered sugar and enjoy!!!
